Applesauce Oat Pancakes

I LOVE breakfast food for dinner...more than I like it for breakfast. This recipe has changed over the years and again, I rarely measure, but when my husband and I went to Nashville, I had pancakes with pulled pork, a fried egg and maple syrup drizzled over everything. Sounds crazy...it's mouthwatering...and every time we have leftover pulled pork, I want this the next day! Here's my version!
Ingredients:
Gluten free pancake mix (I like the Live Free brand or you can make your own from scratch)
About 3/4 cup Gluten free steel cut oats
(4) heaping spoonfuls unsweetened applesauce
Cinnamon
Optional: (when you're not adding bbq or a fried egg) blueberries, chocolate chips, crispy crumbled bacon, sautéed Granny Smith apples with cinnamon - options are endless & I like adding new things!)
Making the pancakes:
1. In a medium size mixing bowl, prepare pancake mix as directed on the box
2. Add about 3/4 cup gluten free steel cut oats, 4 heaping spoonfuls of applesauce & cinnamon to taste (I really just eyeball the oats, applesauce & cinnamon)
4. Stir all ingredients with the pancake mix. I like it lumpy with just enough liquid, if it's too lumpy just add more applesauce.
5. Preheat griddle to 350 degrees & spray with Pam.
6. I use a mini ladle to scoop out the perfect amount of pancake mix onto the griddle. Once the pancakes start bubbling throughout, they're ready to flip!
7. Continue grilling until pancake mix is gone.
8. If you're making the version in the photo, fry up an egg & stack it on top of the pancakes. Then pile a heaping scoop of leftover pulled pork on top of the fried egg and finally, drizzle your favorite maple syrup over the whole stack. Mmm...mmm...good!
