Winter Salad


Ingredients:

1 lb Boneless Skinless Chicken Breast or chicken thighs, marinated in Tuscan Herb Olive Oil

1 Butternut squash, cubed & roasted

1 can chickpeas, drained

Pomegranates

Feta

Leafy green lettuce of your choice


Instructions:

  1. Preheat oven to 400 degrees

  2. Cut butternut squash in half, lengthwise & roast in oven until fork tender

  3. Slice butternut squash & remove all skin. Allow pieces to cool

  4. While butternut squash is roasting, cut chicken into 1" pieces. Drizzle a large frying pan with Tuscan Herb Olive Oil & cook chicken all the way through. Season with Tuscan Farmhouse Seasoning.

  5. Once chicken has cooked through, add chickpeas and cubed butternut squash so the flavors come together

  6. Add lettuce to a plate, then top with chicken, butternut squash, chickpeas, pomegranates & feta

  7. To make the dressing, in a small bowl add 3T oil, 1T balsamic & sprinkle Tuscan Farmhouse Seasoning. Whisk together and drizzle over salad!
