Mexican Pinwheels

These are an easy, make-ahead, crowd pleasing, festive treat that
can be totally customizable!
Ingredients:
6-7 large flour tortillas
(2) 8oz cream cheese, softened
1/2 packet taco seasoning
1/2 can corn
1/2 can black beans
1/2 cup jalapenos, diced
1 cup cheddar cheese, shredded
4 eyeballs to incorporate
**If you want to make these healthier, use gluten free wraps, a light or dairy free cream cheese & make your own taco seasoning.
Making the pinwheels:
1. Soften the cream cheese, shred the cheddar cheese & dice the jalapenos
2. In a small mixing bowl, combine the softened cream cheese, taco seasoning & diced jalapenos
3. Place 6 or 7 tortilla wraps on the counter & spread cream cheese mixture on each, leaving about 1" from the top without
4. Sprinkle each tortilla with cheddar cheese, black beans and corn
5. Start at the bottom of the wrap and tightly roll up all the tortillas individually
6. Once they're all rolled, wrap each pinwheel roll with seran wrap and place in the refrigerator overnight
7. When ready to serve, cut the ends off of the pinwheel rolls then cut the remaining roll into 1/4" thick pieces (you should get about 8-10 pinwheels per roll) and display as you wish!
