Mediterranean Egg Salad

I wanted to come up with an egg salad that didn't use mayo...I'll never eat
'regular' egg salad again! This so sooo flavorful.
Ingredients:
8 eggs, hardboiled
Just over 1/2 cup Kalamata olives, diced small
Just over 1/2 cup Roasted red peppers, diced small
1/2 cup Sun dried tomato feta
Fresh mint, to taste
Fresh parsley, to taste
Red pepper flakes, to taste
Juice of 1/2 lemon
Salt & Pepper, to taste
Making the egg salad:
1. Hard boil eggs & allow to completely cool
2. Remove shells from eggs, rinse & place in a bowl
3. Add kalamata olives, roasted red peppers, feta cheese, mint, parsley, red pepper flakes, juice of 1 lemon, salt & pepper to bowl
4. Using a serrated food chopper, chop eggs & mix altogether (you can also chop the eggs prior to adding all the ingredients)
5. Add desired amount of olive oil & mix again.
