Crispy Red Potato Smash w/Lemon Herb Aioli

These were SUPER delish & made the perfect side dish to our porkchop & broccoli. I highly recommend simmering the potatoes until they're slightly more than fork tender to avoid popping blood vessels in the forehead when attempting to smash the potatoes!


Ingredients for the potatoes:

1 pound small red potatoes, cleaned

1 tablespoon salt, for simmering water

3 tablespoons Lemon Olive Oil

Ingredients for the aioli:

¼ cup mayo

1/2 T minced garlic

1/2 lemon squeezed

Dill


Making the potatoes & aioli:

1. Preheat oven to 425°F. 

2. In a medium pot, cover whole potatoes with cold water & add salt. Bring to a simmer & cook until potatoes are slightly more than fork tender (but not mushy) about 15-20 minutes.

3. Drain & let potatoes cool for about 5 minutes.

4. Add potatoes to baking sheet & coat in oil. Use a flat bottomed glass to smash each potato. Take care to smash the potatoes slowly, moving the glass front to back so they don’t fly all over the baking sheet!

5. Bake until golden & crispy, about 30 minutes.

6. While your potatoes are baking, make the aioli. Stir together mayo, lemon juice, garlic, salt & pepper & top with dill.

7. Dollop each potato with aioli and/or serve on the side.
