Eggroll in a Bowl

This is one of the easiest, healthiest meals you can make! I love it because we typically have all the ingredients on hand, it's super simple & my husband's always in the mood for it.​ I've seen several different versions but here's mine!



Ingredients:

1lb turkey burger, lean hamburger or ground chicken

(1) bag shredded cabbage with carrots (slaw)

1/2 white or yellow onion

1 tbsp Minced garlic

A pinch to 1 tsp Coconut Sugar

A pinch to 1 tsp Sea Salt

A pinch to 1 tsp  Ground Ginger

A pinch of Black Pepper

Crushed Red Pepper

Tamari (or soy sauce, Tamari is gluten free)

Sesame oil

Garnish with green onions


Instructions: ​

1. Heat tamari (or soy)  & sesame oil in a frying pan then add onion. We like spicy food so at this point, I add red pepper flakes so they can cook throughout the meal.

2. Once onions are almost translucent, add garlic & sauté for another few minutes then  add in the hamburger meat. Cook through adding more tamari as needed.

3. Add all spices & sugar. Stir well.

4. Add bag of shredded cabbage to the top of the hamburger, add a touch more sesame oil & tamari then cover with a lid. Turn heat down and allow cabbage to wilt.

5. Add any spices, salt, pepper, sesame oil or tamari to taste.

6. Plate and garnish with a generous amount of green onion (green onion MAKES this dish!!)
