I was craving something asian, something peanuty, something with a burst of flavors...and Peanuty Asian Ramen is what I came up with! I have made this so many times adding a variety of veggies, chicken, shrimp, etc. This is a great go-to dish.
Ingredients:
(1) head of broccoli - steamed & chopped
(1) package boneless skinless chicken tenders - chopped (or shrimp, thawed & cut into pieces)
(3-4) green onions - chopped
Tamari (gluten free version of soy sauce) - to taste
Sesame oil - to tasteSriracha garlic chili sauce - 1-2 heaping teaspoons
Salt & pepper to taste(4) gluten free ramen noodle squares - cooked
(2-3 tablespoons) peanut butter
Hot water (leftover from cooking ramen)
Making the ramen:
1. Wash, steam, drain & cut up broccoli, then set aside. Wash & chop up green onions, white & green parts
2. Wash & dice chicken tenderloins
3. Heat up large frying pan with tamari, sesame oil, sriracha garlic sauce . Once heated, add the white part of the green onions & sauté until translucent.
4. Add chicken & fully cook
5. In the meantime, start boiling water for the ramen, chop up cilantro & cut lime
6. Cook ramen for 8-10 minutes, drain & save a portion of the water for the sauce
7. Place broccoli & ramen in frying pan with chicken
Making the sauce:
1. Whisk 1 tbsp tamari, 1 tbsp sesame oil, sriracha garlic sauce & peanut butter together. Add hot water from the ramen as needed to thin out the thickness of the peanut butter
2. Taste test and once desired texture & flavor has been reached, pour over chicken, broccoli & ramen
3. Plate meal, then garnish with green part of green onions .
