Mango Avocado Black Bean Salsa

I was recently at a friends house and she served the most A-MAZING grilled salmon with this mango, avocado goodness and I knew I had to experiment this week! I was very pleased with the result and we will definitely keep this on our summer go-to menu.
Salsa Ingredients:
(2) mangos, diced
(2) small avocados, diced
(1) can black beans, drained & rinsed
Handful of cherry tomatoes, diced
1/2 red onion, diced
Dressing Ingredients:
Minced garlic (above a clove)
1/4 cup Olive oil
1/2 cup Cilantro
(1) Lime, juiced
1/2 teaspoon maple syrup
1/2 teaspoon dijon mustard
Salt to taste
Making the Salsa:
1. I diced up all my fruits & herbs then made the dressing first (except the avocado). Add all ingredients for the dressing into a bullet mixer & blend until fully incorporated.
2. Dice up the avocado then add all the salsa ingredients to a medium size bowl.
3. Drizzle dressing over the salsa ingredients & chill until ready to serve!
